Will the evaluation version let me select multiple channels?

No, the evaluation version will allow you to test Insight with one channel. Once you purchase the software, you can change or add more channels by using a free utility called EnableChannelSelect.exe that is available in the Utilities folder included with the purchased licensed CD-ROM or download.
